Grilled Pork Butt

Ingredients

1 whole pork butt (bone-in)

Your favorite BnB Saus

Olive oil (1.5 Cups)

Meat Tenderizer (5 tbs)

Garlic Powder (4 tbs)

Pepper (3 tbs)

Thyme (4 tbs)

Smoke seasoning (5 tbs)

Paprika (2 tbs)

Season Salt (3 tbs)

Italian Seasoning (3 tbs)

Chili Powder (2 tbs)

Everglades Seasoning (2 tbs)

Preparation

  1. Combine the seasonings into one bowl.

  2. Trim some of the fat off the top of the pork butt. Make sure to not trim the bottom fat. There will be a nice layer of fat there and you will want that to render through the meat as you cook.

  3. Score the bottom fat down and across so the seasonings can pass through it into the meat. It will also help the fat to render and break down as it cooks.

  4. Beat the meat with a tenderizer to loosen the connective tissue. This will allow the seasonings and fat to really flow through the meat.

  5. Drizzle the olive oil and gently rub it in.

  6. Add your rub, making sure to work into the meat folds and into the bottom fat layer.

  7. Marinate for at least 30 minutes. For best results, marinate the day before and store in the refrigerator overnight.


Grilling Instructions

For the Grill:

Set your temperature at 300-375 degrees. Make sure you have a cold side and hot side to the grill. Cook time will be depend on your grill temp and outside conditions. Place your meat on the cold side of the grill, and go low and slow for best results. Allow 4-5 hours cook time. Keep your heat level as even as possible throughout the cook. Make sure the meat reaches an internal temperature of 195-205 degrees. Remove the butt from the grill and let rest.

For a Smoker:

Set your temperature to 225-250 degrees. If using wood chips, soak them overnight to yield the best results. Make sure to have a cold side and hot side of the grill. Place the meat on the cold side of the grill. Once the meat reaches an internal temperature of 165 degrees, take the meat from the grill and wrap it tightly in foil. Place back on the grill and continue to cook until it reaches an internal temperature of 195-205 degrees. Let the meat rest for at least 1 hour after removing from the grill.

Serving Instructions

  1. Make sure you have your favorite BnB Saus.

  2. Prepare your favorite sides.

  3. Once the meat has rested, pull it from the bone and pull it to make smaller pieces.

  4. Serve with a bun or bread of your choice.

  5. Grab your meat, place it on a bun, and soak it with your favorite BnB Saus.
